1 large chicken breast, skinned and cut into cubes
1/4 c butter
1 large onion finely diced
1 minced clove of garlic
1 1/2 t curry powder
1/2 t thyme
1 can Watties savoury tomatoes (with green pepper) made up to 2 cups with water
3 T currants
1 1/2 T brown sugar.
Roll chicken pieces in seasoned flour. Brown with butter, onion, garlic and curry powder until cooked.
Add thyme, savoury tomatoes, currants and brown sugar. Simmer for 30 minutes and serve over rice.
