Pineapple Muffins

Note: These recipes use NZ measurements. 1 c = 1 cup = 250 ml. 1 T = 1 tablespoon = 15 ml. 1 D = 2 teaspoons. 1 t = 1 teaspoon = 5ml. If you're in America, you may find you need a little extra baking powder in recipes that use it.

1/2 c pineapple, chopped
1 c pineapple juice
1 egg
2 T margarine, melted
1/4 c sugar
2 c flour
4 t baking powder

Light oil a muffin tin and preheat oven to 200C. This recipe makes 12 muffins.
Put the first five ingredients into a bowl and mix well. Add the remaining ingredients and blend until just mixed. Two-thirds fill and bake for 15 minutes.
