Gingernuts

Note: These recipes use NZ measurements. 1 c = 1 cup = 250 ml. 1 T = 1 tablespoon = 15 ml. 1 D = 2 teaspoons. 1 t = 1 teaspoon = 5ml. If you're in America, you may find you need a little extra baking powder in recipes that use it.

100g butter
1 T golden syrup
1 c sugar
2 t – 4 T ginger (depending on how gingery you like it)
1 egg
1 t baking soda
1 3/4 c flour

Melt butter and golden syrup. Add sugar, ginger and egg, beat with a fork until well mixed. Add baking soda then unsifted flour. Mix to make a dough. Roll into balls and bake at 180 C for 10 minutes until golden brown.
