Pot roast

Note: These recipes use NZ measurements. 1 c = 1 cup = 250 ml. 1 T = 1 tablespoon = 15 ml. 1 D = 2 teaspoons. 1 t = 1 teaspoon = 5ml. If you're in America, you may find you need a little extra baking powder in recipes that use it.

A couple of pounds of cheap pot roast meat
1 can diced tomatoes
2 cans water
3 T tomato paste
1/4 c lemon juice
1/4 c vinegar
3 T brown sugar
2 T worchestshire sauce
1/4 c tomato sauce
2 T mustard
potatoes & carrots

Pat dry and season meat. Brown in a couple T of oil over high heat. Add tomatoes, water & tomato paste and cook for 3 hours at 325F.
Add remaining ingredients and cook for 90 minutes or more until meat is tender and vegetables are cooked.
Rest for 20 minutes. Pour off some sauce and thicken with cornstarch.
