Platejoy Fish

Note: These recipes use NZ measurements. 1 c = 1 cup = 250 ml. 1 T = 1 tablespoon = 15 ml. 1 D = 2 teaspoons. 1 t = 1 teaspoon = 5ml. If you're in America, you may find you need a little extra baking powder in recipes that use it.

1 filet of fresh fish per person
1 lemon
panko bread crumbs

Preheat oven to 200 C fan bake.
To food processor per filet of fish: add half a cup of panko crumbs, 1 oz of butter chopped into small cubes, 1tsp lemon zest, salt and pepper. Mix.
Line flat tray with tin foil, spread thin layer of bread crumb mix, lay filets on top, then cover with remaining mix.
Cook for 10 minutes. Check fish is cooked.
Serve with oven baked potato chips – these take 20 minutes at same oven temp.
